I also made chocolate glaze, because that is the proper way to make Brazilian-style carrot cake, however, I didn't pour the glaze over the top, since sometimes I like to eat the cake without chocolate, in the morning. For the first time in my life, I made a cake that came out of the pan easily. I think the secret was using cold butter to grease the pan.
